The Melrose Hill Yam Park is located right off the Melrose Hill Bypass in Manchester and is home to over 10 vendor shops. As the name suggests, it’s specialty is roasted yam which is typically served with saltfish. Once you drive into the park, you’ll be greeted by various vendors trying to showcase their products with hopes of earning the sale. The variety of yams served is slow-roasted until tender for eating. Just the roasted yam can be eaten with a little butter if one opts to not have the saltfish. As the years have passed by, the food offerings have widened to now include soups, roasted corn, roasted sweet potatoes amongst other food items.
